Dr.
Dick's (Dyer) Mean and Lean Kidney Bean Hash
(cont.)
Directions:
- Heat
olive oil in large fying pan. Saute onion until soft.
- Add
green and red peppers and saute briefly.
- Add
diced potatoes, mix well. Cook for 10 minutes, turning
with spatula every 2 minutes.
- While
this is cooking, rinse the beans well to remove the
*goo*, then mash 1/2 to 2/3 of the beans with a potato
masher. Mix the beans into the mixture in the frying
pan, add 1/2 cup water, and cover. Cook over medium
heat for about 5 minutes.
- Season
to taste, serve, and enjoy. This serves two or one very
hungry person. (I ate it all the first time Dick made
it as I was very hungry and it was soooo good!)
Serving
Suggestion: For
turkey hash, substitute diced turkey for kidney beans.
Or you may simply add diced turkey to this recipe for
those who want to use up that left-over holiday (or anyday)
turkey.
